The Bunch Celebrate Birthdays

We had a busy week this week. It was not only our eldest son's birthday, but also my father's birthday. We drove out to Bonham to celebrate C's 31st birthday by going out to dinner and having D's Memaw's chocolate pie, which is the BEST recipe I have ever tasted! Unfortunately, the pie didn't turn out as intended. L always liked to bake so normally she would make the crust for the pies and I would do the fillings. Obviously, she didn't do that this year so I tried my hand at it. The kids actually have a great crust recipe in their HomeEc book that we use. I am NOT a fan of crust, but I will actually eat this one. Anyways, I followed the directions and put it in the deep tin to bake. I even used a fork to make the edges look pretty before I baked it. I put it in the oven for about twelve minutes and when I took it out, it was a beautiful golden brown. HOWEVER, the sides ended up shrinking and I ended up with an uneven and fairly ugly crust. I wasn't too worried though since I was filling it. My next step was making the yummy chocolate filling. I cooked it until it thickened and poured it into the crust to cool. The crust was still obviously uneven, but it looked presentable with the filling. I was happy. I let it cool and put it in the fridge. I took it out of the fridge the next day and put it in a pie carrying container inside an insulated bag and covered it with every ice pack we had. We drove the hour and a half to C's and once we arrived H put it immediately in the fridge. After we came back from eating H brought the pie out and opened the container. My pie had somehow turned into runny mush and had spilled all over the container! I have no idea what happened. We still ate it and the flavoring was yummy, but it was a mess, plus the ice had made the crust so cold that it was hard to get it out of the pan. Basically, it was a colossal waste of time and I will just buy a pie next year. We still had a wonderful time seeing everyone though and enjoyed our visit with C and H. I can't believe the next time we see them it will be the holidays! This year is just flying by!

Because of the pie debacle, we used H's Bundt cake for pics! 😂It looked really yummy. too bad I can't eat gluten.

The day after we went to see C, we drove in the complete opposite direction for another hour and a half to go over to my in laws to help them get some things done on the farm that they needed help with. My father in law has longhorns and for the first time ever one of the bulls has gone crazy! In the past few months this thing has destroyed his huge metal barn, ripped up fencing, and destroyed big steel hay rings. He is scary and I am really worried about him hurting my in laws. While we were there, he kept following us around, pawing at the ground and bellowing at us. Generally, he was just letting us know he wasn't happy and he was in charge. He also started ramming the barn with his huge horns while we were in it!!! We are coming back at 7am on Sunday to hopefully get him and two other bulls on the property loaded to go to auction. We can only haul one at time and the auction house is over an hour away each way so this will be an all day thing, but they need to go, especially the crazy one with killer horns that weighs like 1300 pounds or so! 

The day after we helped my in laws, we headed about an hour south so I could go to my specialist appointment and celebrate my father's birthday. We made my dad a chicken lunch with salad, mashed potatoes, carrots, and some rolls. It was yummy and he really liked it. We topped it off with some peach cobbler, which while not as good as it was when my in laws had their Indian peach tree, it was still delicious. We had a great visit and enjoyed seeing them. It was a great weekend of visiting family.

We weren't able to play pickleball this week, but hope to go play again sometime soon. In addition to spending time with family this week, we also got T ready for his first camping trip with his troop. He is very excited to be going and I really hope he enjoys it. He had a very upsetting year and I really want him to be able to just enjoy his last two years of just being a kid, albeit a big kid, but still a kid.

We FINALLY got 2 inches of rain!! which just made the cracks start collapsing so it's temporarily more dangerous in our field.

The Bunch Have A Hard Week

This was actually part of T's present. He had been begging D to do it.😂 It only stayed around a short while. After throwing such a fun and memorable birthday party for T at the lake with his basketball buddies, we have decided to part ways with the basketball organization. I cannot get past that evil man being anywhere near us or people I care about. I did make sure to give everyone a fair warning about the evil man and they can now hopefully make an informed decision about their level of involvement with him. I don't think T's too bothered by it. He didn't want to play this year anyways, but I had originally really wanted him to be around his friends. I am not sure what we will do instead, but I know he is happy to NOT have to run. He hates running. I am basically just feeling completely defeated. I trust no one and have a complete LACK of faith in police officers and lawyers. I know my husband is a good officer, but that's about it and the count is on until June

The Bunch Enjoy Easter

The Bunch ready to head to church to celebrate Easter. We had a wonderful Easter. The kids and I dyed eggs together. T made a fairly intricate Guns N Roses logo egg while A and I just enjoyed making pretty eggs. We have discovered that using food coloring makes for way brighter eggs than using the horrible Easter egg dye kits from the store. I participated in the egg hunt with the kids this year. It was so much fun! We laughed so hard as we all ran around trying to beat each other. Afterwards, we had our traditional egg gravy and went to church. We enjoyed a ham dinner and watched HOP. It was a great day.  T worked a long time on this egg. It was by far the most intricate egg he has ever done. He did a fantastic job! T actually fell down (you can tell by grass on his knee), but he wasn't going to lose no matter what! We had so much fun and laughter! It was great!! All smiles on our way to church. The Bunch Celebrate Valentine's Day And Grandma's Birthday

  Obviously, now that my kids are all pretty much grown Valentine's isn't as big of deal to them. However, in keeping with tradition, not to mention the fact T still wanted out of school for the day, we still had a mini party.  I told them that this year I wasn't going to get them any candy, normally I get balloons and special treat for each of them, but this year I just wasn't feeling it so I decided I would buy them all pizza (a treat since I rarely allow pizza) and I had some little Bundt cakes to celebrate with. They all said they were fine with that. L doesn't really do sweets, A doesn't like chocolate, and T doesn't like truffles, but they all like pizza. We took the day off and fortunately didn't have any basketball related stuff. No practice, no games, a rare no basketball day. We watched a movie, played some minute to win it games, and just basically enjoyed a nice low key day.  I remember the old days when they were little and we would all make
